- 2 cups cottage cheese
- 1 cup fresh or frozen blueberries
- 1/4 cup honey
- 1/2 cup oats
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp cinnamon (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the cottage cheese, eggs, honey, vanilla extract, oats, salt, and cinnamon until well combined.
- Gently fold in the blueberries.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes, or until the edges are pulling from the pan and the middle is set.
- Let it cool for 10 minutes before slicing and serving.
Notes
You can customize the recipe by adding nuts or different kinds of berries. Make sure to not overbake to avoid a rubbery texture.
