- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/3 cup butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 cup Coca-Cola
- 1 cup heavy whipping cream
- 1 tablespoon gelatin
- 1/4 cup cold water
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press the mixture into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing well.
- In a small saucepan, combine Coca-Cola and bring it to a simmer. Add gelatin to the cold water to dissolve, then stir into the Coca-Cola until fully incorporated.
- Pour the Coca-Cola mixture into the cream cheese mixture and mix until smooth.
- In another bowl, whip the heavy cream until soft peaks form, then fold it into the cream cheese mixture.
- Pour the cheesecake filling over the crust in the springform pan.
- Refrigerate for at least 240 minutes or until set.
- Serve chilled and enjoy!
