Description

A fun twist on classic cheesecake with the unique flavor of Coca-Cola, perfect for gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/3 cup butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup Coca-Cola
  • 1 cup heavy whipping cream
  • 1 tablespoon gelatin
  • 1/4 cup cold water

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing well.
  4. In a small saucepan, combine Coca-Cola and bring it to a simmer. Add gelatin to the cold water to dissolve, then stir into the Coca-Cola until fully incorporated.
  5. Pour the Coca-Cola mixture into the cream cheese mixture and mix until smooth.
  6. In another bowl, whip the heavy cream until soft peaks form, then fold it into the cream cheese mixture.
  7. Pour the cheesecake filling over the crust in the springform pan.
  8. Refrigerate for at least 240 minutes or until set.
  9. Serve chilled and enjoy!
