Easily make delicious Strawberry Cheesecake Bars that are creamy and perfect for any occasion.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, room temperature
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 ½ cups fresh strawberries, mashed and whole
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs and melted butter until sandy in texture. Press into the bottom of a square pan.
- In another bowl, beat cream cheese and sugar until smooth. Add vanilla and mix well.
- Add eggs one at a time, mixing until just combined. Do not overbeat.
- Spoon the filling over the crust. Top with strawberries, mashing some and swirling the juice.
- Bake for about 30 minutes, until the center is slightly jiggly.
- Cool, then chill for at least 4 hours before cutting into bars.
Notes
Let all dairy products reach room temperature before mixing for best texture. Keep an eye on the baking process starting at 25 minutes.
