Ingredients

  • 1 lb boneless skinless chicken, cut into pieces
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 12 oz rigatoni or penne pasta
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1 sweet onion, chopped
  • 3 cloves minced garlic

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped sweet onion and minced garlic. Sauté until fragrant.
  2. Add the boneless skinless chicken and cook until browned.
  3. Stir in the marinara sauce and Italian seasoning.
  4. Add the rigatoni or penne pasta and enough water to cover the pasta.
  5. Bring to a boil, then reduce heat and simmer until the pasta is cooked.
  6. Stir in mozzarella and parmesan cheeses until melted and creamy.
  7. Serve warm.

Notes

For a vegetarian option, replace the chicken with sautéed vegetables like zucchini or bell peppers.
