Ingredients

- 1 lb boneless skinless chicken, cut into pieces
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 12 oz rigatoni or penne pasta
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 1 sweet onion, chopped
- 3 cloves minced garlic
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped sweet onion and minced garlic. Sauté until fragrant.
- Add the boneless skinless chicken and cook until browned.
- Stir in the marinara sauce and Italian seasoning.
- Add the rigatoni or penne pasta and enough water to cover the pasta.
- Bring to a boil, then reduce heat and simmer until the pasta is cooked.
- Stir in mozzarella and parmesan cheeses until melted and creamy.
- Serve warm.
Notes
For a vegetarian option, replace the chicken with sautéed vegetables like zucchini or bell peppers.
