Description

A creamy, one-pot comfort chowder featuring smoked sausage and sweet corn—a perfect cozy meal for chilly nights.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 2 cups corn (fresh or frozen)
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup milk or cream
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. In a large pot over medium heat, add the sliced sausage and brown slightly. Remove and set aside.
  2. In the same pot, add the diced onions and carrots and sauté until soft.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced potatoes and corn.
  5. Pour in the chicken broth and bring to a gentle simmer, then cover the pot.
  6. After about 20 minutes, when the potatoes are tender, return the sausage to the pot and stir in the milk or cream.
  7. Season with salt and pepper to taste. Enjoy your chowder hot!
