- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup butter, softened
- 1 egg yolk
- 1/2 teaspoon baking powder
- 1/4 teaspoon cornstarch
- 1/4 cup cream cheese
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh strawberries, diced
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the egg yolk and mix well.
- In another bowl, mix flour, baking powder, and cornstarch.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, combine cream cheese, powdered sugar, and vanilla extract.
- Freeze the cream cheese mixture in blobs for about 30 minutes.
- Once frozen, take the dough and place a blob of cream cheese filling in the center of a dough ball, encasing it completely.
- Place the filled dough balls onto a parchment-lined baking sheet.
- Bake for 10-12 minutes, until edges are lightly golden.
- Let cool before serving.
Notes
Ensure to chill the dough to prevent cookies from spreading too much. You can freeze uncooked dough balls for later baking.
