Quick and tasty lazy enchiladas perfect for a busy weeknight meal.
Ingredients

- 8 corn tortillas
- 2 cups shredded cooked chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 1 can black beans, drained and rinsed
- 1/2 cup diced onions
- 1/2 cup diced bell pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the chicken, black beans, onions, bell peppers, and half of the enchilada sauce.
- Fill each tortilla with the mixture, roll them up, and place them seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with cheese.
- Bake for 20-25 minutes until heated through and cheese is melted.
- Garnish with fresh cilantro before serving.
Notes
Great for using up leftover chicken! Adjust spice levels as desired.
