Description

Quick and tasty lazy enchiladas perfect for a busy weeknight meal.


Ingredients

  • 8 corn tortillas
  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1/2 cup diced onions
  • 1/2 cup diced bell pepper
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the chicken, black beans, onions, bell peppers, and half of the enchilada sauce.
  3. Fill each tortilla with the mixture, roll them up, and place them seam-side down in a baking dish.
  4. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  5. Bake for 20-25 minutes until heated through and cheese is melted.
  6. Garnish with fresh cilantro before serving.

Notes

Great for using up leftover chicken! Adjust spice levels as desired.
