- 6 large eggs
- 1 cup cooked and crumbled breakfast sausage or bacon

- 1 cup diced bell peppers
- 1 cup diced onions
- Salt and pepper to taste
- Salsa (optional, for serving)
Instructions
- In a large skillet, sauté the diced bell peppers and onions until softened.
- In a bowl, whisk together the eggs, then season with salt and pepper.
- Pour the eggs into the skillet, adding the cooked sausage or bacon, and scramble until fully cooked.
- Lay each tortilla flat and fill with the egg mixture and shredded cheese.
- Roll up the tortillas tightly and place them in a freezer-safe container or wrap individually in plastic wrap.
- To reheat, preheat the oven to 375°F (190°C).
- Bake the frozen burritos for 25-30 minutes, or until heated through.
- Serve with salsa if desired.
