Ingredients

  • 6 large eggs
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • Salt and pepper to taste
  • Salsa (optional, for serving)

Instructions

  1. In a large skillet, sauté the diced bell peppers and onions until softened.
  2. In a bowl, whisk together the eggs, then season with salt and pepper.
  3. Pour the eggs into the skillet, adding the cooked sausage or bacon, and scramble until fully cooked.
  4. Lay each tortilla flat and fill with the egg mixture and shredded cheese.
  5. Roll up the tortillas tightly and place them in a freezer-safe container or wrap individually in plastic wrap.
  6. To reheat, preheat the oven to 375°F (190°C).
  7. Bake the frozen burritos for 25-30 minutes, or until heated through.
  8. Serve with salsa if desired.
