Ingredients
  

For the Baked Fish

  • 4 pieces Baked fish fillet Use your preferred type of fish
  • 3 cloves Garlic Minced
  • 2 tablespoons Herbs Fresh or dried, to taste
  • 1 teaspoon Salt Adjust to taste

For the Quinoa and Vegetables

  • 1 cup Quinoa Rinse before cooking
  • 2 cups Sautéed spinach Fresh spinach sautéed
  • 1 cup Mushrooms Sliced
  • 1 medium Tomato Chopped
  • 1 small Onion Chopped
  • 1/4 cup Cilantro Chopped
  • 1 whole Lemon Cut into wedges

Instructions
 

Preparation

  • Preheat the oven.
  • Season the fish fillet with garlic, herbs, and salt.

Cooking

  • Bake the fish until cooked through, approximately 15-20 minutes.
  • Cook the quinoa according to package instructions.
  • Sauté spinach and mushrooms in a pan until tender.

Assembly

  • Chop the tomato, onion, and cilantro, mixing them in a bowl to prepare the salad.
  • Serve the baked fish on a bed of quinoa, topped with sautéed spinach and mushrooms, alongside the salad and lemon wedges.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the microwave or enjoy cold.
