  • 4 pieces Baked fish fillet Use any type of fish like salmon, tilapia, or cod.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Herbs Fresh herbs like parsley or dill work well.
  • 1 cup Quinoa Cook according to package instructions.
  • 2 cups Sautéed spinach Can be substituted with other vegetables.
  • 1 cup Mushrooms Sautéed.
  • 1 medium Tomato Chopped for salad.
  • 1 small Onion Chopped for salad.
  • 1/4 cup Cilantro Chopped for salad.
  • 1 medium Lemon For squeezing over the dish.
  • to taste Salt For seasoning.

Instructions
 

Preparation

  • Preheat your oven.
  • Season the fish fillet with minced garlic and herbs.
  • Bake the fish until cooked through.

Cooking Quinoa and Vegetables

  • Cook quinoa according to package instructions.
  • In a pan, sauté spinach and mushrooms together until tender.

Salad Preparation

  • Chop tomatoes, onions, and cilantro, and mix in a bowl.

Serving

  • Serve the baked fish on top of a bed of quinoa, add sautéed vegetables, and a side salad.
  • Add a squeeze of lemon and salt to taste.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the microwave or stove.
