Main Ingredients

  • 1 cup Rice (e.g., basmati, jasmine) Feel free to use your preferred rice.
  • 2 cups Cherry tomatoes These will burst in the oven.
  • 1 block Feta cheese Use a block for baking.
  • 2 tablespoons Olive oil Extra oil can be drizzled before serving.
  • 2 cloves Garlic, minced Minced for better flavor infusion.
  • 1 tablespoon Fresh basil, chopped Adds freshness to the dish.
  • to taste Salt Season as desired.
  • to taste Pepper Freshly ground is recommended.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, combine rice and cherry tomatoes.
  • Drizzle olive oil and add minced garlic, salt, and pepper.
  • Place the feta cheese block in the middle of the dish.

Cooking

  • Bake for 25-30 minutes or until the tomatoes are bursting and the rice is cooked.
  • Remove from oven and stir in chopped fresh basil before serving.

Notes

Store leftovers in an airtight container in the fridge for 3 to 4 days. Can be reheated in the microwave or oven. Optional: Add other veggies like spinach or bell peppers, and use goat cheese or mozzarella for variation.
