Ingredients
  

For the BBQ Chicken

  • 4 pieces BBQ grilled chicken Chicken breasts or thighs can be used.
  • 1 cup BBQ sauce Use your favorite BBQ sauce.

For the Mashed Potatoes

  • 4 cups Potatoes Peeled and chopped.
  • 4 tablespoons Butter Makes the potatoes creamy.
  • 1/2 cup Milk Use any type of milk.
  • 1/2 cup Sour cream Essential for creaminess.

For the Sides

  • 1 cup Rice Cook according to package instructions.
  • 2 cups Lettuce Chopped.
  • 1 cup Corn Fresh or canned.
  • 1 piece Avocado Chopped or sliced.
  • 1/4 cup Ranch dressing For salad dressing.

Cooking the Chicken

  • Start by grilling your chicken until it’s cooked through. Slather some BBQ sauce on it while it cooks for extra flavor.

Preparing the Mashed Potatoes

  • Peel and chop the potatoes, then boil them until soft. After draining, mash them with butter, milk, and sour cream until creamy.

Cooking the Rice

  • While the chicken and potatoes are cooking, make some rice according to the package instructions.

Making the Salad

  • Chop up some lettuce, corn, and avocado. Toss them together and add a drizzle of ranch dressing for a fresh side.

Serving

  • Place the grilled chicken on a plate with the mashed potatoes, rice, and salad on the side.

Notes

For an extra creamy taste, do not skip the sour cream in the mashed potatoes. Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, use a microwave or oven.
