  • 1 pound Grilled steak strips Cooked to your preference
  • 1 cup Quinoa or brown rice Prepare according to package instructions
  • 1 can Black beans Rinsed and drained
  • 1 cup Corn Fresh or frozen
  • 1 large Red bell pepper Diced
  • 2 cups Spinach Fresh
  • 1 large Avocado Diced
  • 1 medium Onion Diced
  • 1 large Tomato Diced
  • 1 large Lime For juice
  • 1 teaspoon Cumin To season salad
  • 1 teaspoon Salt To taste

Preparation

  • Prepare quinoa (or brown rice) according to package instructions.
  • In a skillet, grill steak strips until cooked to your preference.

Assembly

  • In a bowl, combine cooked quinoa (or brown rice) with black beans, corn, and diced red bell pepper.
  • In a separate bowl, create a salad with spinach, diced avocado, onion, and tomato.
  • Squeeze lime juice over the salad and season with cumin and salt.
  • Serve the grilled steak strips on top of the quinoa mixture, alongside the salad.

Notes

Store any leftover Beef & Quinoa Bowl in an airtight container in the fridge for about 3-4 days. Reheat in the microwave or enjoy cold. Make sure not to overcook the steak for maximum tenderness. Feel free to add your favorite veggies or toppings like salsa or cheese for more flavor. Use lime juice to brighten up the dish right before serving.
