  • 4 tbsp Butter For mashing.

Other Ingredients

  • 1 cup Rice Cooked according to package instructions.
  • 1 cucumber Cucumber Chopped for salad.
  • 1 cup Lettuce Chopped for salad.
  • 1 medium Tomato Chopped for salad.
  • 2 tbsp Lemon dressing For salad.

Preparation

  • Slice the beef thinly to help it cook quickly and stay tender.
  • Chop onion, bell peppers, cucumber, lettuce, and tomato as needed.
  • Boil potatoes until tender, then mash with butter and herbs.

Cooking

  • Sauté beef strips in a skillet over medium-high heat until browned.
  • Add sliced onion and bell peppers, cooking until soft.
  • Cook rice according to package instructions.
  • Create a salad by mixing cucumber, lettuce, and tomato, then drizzle with lemon dressing.

Serving

  • Serve the beef stir-fry over rice with a side of mashed potatoes and salad.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat before serving. For extra flavor, adjust seasoning in the mashed potatoes or add extra veggies like carrots or broccoli. This recipe can be varied by substituting beef with chicken or tofu.
