  • 1 cup Grits Prepare according to package instructions
  • 2 cups Chicken broth Used instead of water for added flavor
  • 2 tablespoons Butter To make the grits creamy
  • 1/2 cup Milk or cream Use for creaminess

For the Shrimp

  • 1 pound Shrimp Fresh shrimp preferred
  • 2 tablespoons Blackening seasoning Mix of paprika, cayenne pepper, thyme, oregano, garlic powder, onion powder
  • 1 tablespoon Lemon juice To drizzle over the shrimp
  • 2 tablespoons Fresh parsley For garnish

Preparation of Grits

  • Prepare the grits according to package instructions, using chicken broth instead of water for added flavor.
  • Stir in butter and milk or cream to make the grits creamy.

Cooking the Shrimp

  • In a bowl, toss shrimp with blackening seasoning.
  • Heat a skillet over medium-high heat and add a little oil.
  • Cook the shrimp until they are blackened and cooked through, about 2-3 minutes per side.

Serving the Dish

  • Serve the blackened shrimp over creamy grits, drizzle with lemon juice, and garnish with fresh parsley.

Notes

If you have leftovers, let them cool completely before transferring to an airtight container. They can be stored in the fridge for up to 3 days. Reheat gently in the microwave or on the stove with a splash of chicken broth to restore creaminess. For a milder flavor, reduce cayenne pepper in the seasoning. You can also swap out shrimp for other proteins like chicken or tofu.
