Mashed Potatoes

  • 4 cups Mashed potatoes
  • 4 tablespoons Butter Can be substituted with low-fat butter or olive oil
  • 2 tablespoons Herbs Any herbs like parsley or chives

Serving Sides

  • 2 cups Brown rice Can be substituted with white rice, quinoa, or pasta
  • 2 cups Cabbage, shredded
  • 1 cup Carrot, grated
  • 3 tablespoons Lemon dressing

Instructions
 

Cooking Chicken

  • Sauté the diced chicken breast with chopped onions and minced garlic in a pan until the chicken is no longer pink.

Preparing Mashed Potatoes

  • While the chicken cooks, prepare the mashed potatoes. Mix the cooked potatoes with butter and your choice of herbs until smooth and creamy.
