Fruit Ingredients

  • 1 cup mandarin oranges, drained
  • 1 cup pineapple chunks
  • 1 cup grapefruit segments
  • 1/2 cup shredded coconut

Dressing Ingredients

  • 1/2 cup Greek yogurt or sour cream
  • 1 tbsp honey Add more for a sweeter flavor.

Preparation

  • In a large bowl, toss together the mandarin oranges, pineapple chunks, and grapefruit segments.
  • Add the shredded coconut and Greek yogurt (or sour cream) to the bowl.
  • Drizzle the honey over the mixture.
  • Mix everything well until it’s combined.
  • Chill the salad in the fridge before serving.

Notes

Store leftovers in an airtight container in the fridge and consume within a day or two. Use fresh, ripe fruits for the best taste. You can also replace grapefruit with fruits like kiwi or strawberries.
