  • 1 cup grapefruit segments Use ruby red grapefruit for sweetness.
  • 1/2 cup shredded coconut Unsweetened coconut is preferable.

Dressing Ingredients

  • 1/2 cup Greek yogurt or sour cream Choose Greek yogurt for a protein boost.
  • 1 tbsp honey Adjust based on sweetness preference.

Preparation

  • Toss together the mandarin oranges, pineapple chunks, and grapefruit segments in a large bowl.
  • Fold in the shredded coconut and Greek yogurt or sour cream gently.
