Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour for coating
  • 1/2 cup cornstarch for coating
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying enough for deep frying

For the Bang Bang Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 tablespoon honey

Instructions
 

Preparation

  • Marinate the chicken pieces in buttermilk for at least 30 minutes.
  • In a separate bowl, mix together the flour, cornstarch, garlic powder, paprika, salt, and black pepper.

Cooking

  • Heat oil in a deep skillet or fryer to 350°F (175°C).
  • Take the chicken out of the buttermilk and coat each piece in the flour mixture.
  • Fry the chicken in small batches for about 4-5 minutes until golden brown.
  • Drain the fried chicken on paper towels to remove extra oil.

Making the Sauce

  • In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey to make the Bang Bang Sauce.

Serving

  • Toss the crispy fried chicken in the Bang Bang Sauce and serve immediately.

Notes

For best results, let the chicken marinate longer. Avoid overcrowding the pan when frying.
