  • 4 pieces Chicken breasts Boneless, skinless
  • 2 tablespoons Olive oil For seasoning
  • 2 teaspoons Garlic Minced or crushed
  • 1 teaspoon Paprika For flavor
  • 1 teaspoon Mixed herbs Choose your favorite blend

For the Roasted Potatoes

  • 4 cups Potatoes Diced into cubes
  • 2 teaspoons Rosemary Fresh or dried

For Serving

  • 2 cups Steamed rice Cooked according to package instructions
  • 4 cups Mixed greens For salad
  • 1 cup Cherry tomatoes Halved
  • 1/4 cup Balsamic dressing For salad dressing

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season chicken breasts with garlic, paprika, and herbs, then grill until cooked through.
  • Toss diced potatoes with olive oil and rosemary, then spread on a baking sheet and roast for about 25-30 minutes until golden.
  • Cook rice according to package instructions.
  • Prepare the salad by tossing mixed greens, cherry tomatoes, and balsamic dressing together.

Serving

  • Serve the grilled garlic chicken with roasted potatoes, rice, and salad on the side.
  • Drizzle a bit more balsamic dressing over the salad for extra flavor.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven or microwave until heated through.
