  • 4 pieces garlic chicken breast or chicken thighs
  • 1 teaspoon paprika
  • 1 teaspoon herbs fresh or dried
  • 4 medium potatoes cubed
  • 3 tablespoons olive oil for tossing potatoes
  • 1 teaspoon rosemary fresh or dried

For the Rice and Salad

  • 1 cup rice cooked according to package instructions
  • 4 cups mixed greens for salad
  • 1 cup cherry tomatoes halved
  • 3 tablespoons balsamic dressing for drizzling on salad

Preparation

  • Preheat your oven to 400°F (200°C).
  • Season the garlic chicken breast with paprika and herbs.

Cooking

  • Grill the chicken until fully cooked.
  • Cube the potatoes and toss them with olive oil and rosemary, then spread on a baking sheet.
  • Roast the potatoes in the oven for 25-30 minutes, or until golden brown.
  • Cook the rice according to package instructions.

Assembly

  • Assemble the salad by mixing greens with cherry tomatoes and drizzling balsamic dressing over the top.
  • Serve the grilled chicken with roasted potatoes, rice, and salad.

Notes

Make sure not to overcook the chicken, as it can become dry. Let the potatoes roast until golden brown for the best flavor and texture. Feel free to add more vegetables to the salad for extra crunch!
