  • 14 oz Firm tofu (cubed) Press the tofu before cooking to remove extra moisture.
  • 2 cup Bell peppers Use a mix of colors for a vibrant dish.
  • 1 cup Snap peas
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, minced
  • 3 tbsp Soy sauce Use low-sodium for a lighter flavor.
  • 1 tbsp Sesame oil For sautéing.

Preparation

  • Sauté minced garlic and ginger in a pan with sesame oil until fragrant.
  • Add the cubed tofu to the pan and cook until golden brown on the outside.
  • Toss in the bell peppers and snap peas.
  • Drizzle soy sauce over everything and mix well.
  • Stir-fry for a few minutes until the veggies are crisp-tender.

Notes

Serve warm over rice or quinoa. Store leftovers in an airtight container in the fridge for up to three days.
