Ingredients
  

For the Shrimp

  • 1 pound shrimp Thawed if frozen
  • 4 cloves garlic Minced
  • 3 tablespoons butter For cooking shrimp
  • 1/4 cup parsley Fresh, chopped

For the Potatoes

  • 4 medium potatoes Cut into wedges
  • 3 tablespoons olive oil For roasting
  • 1 teaspoon herbs Mix of your choice

For Serving

  • 2 cups rice Cooked
  • 2 cups arugula Fresh
  • 1 cup cherry tomatoes Halved
  • 1/4 cup citrus dressing For salad

Instructions
 

Cooking Shrimp

  • In a skillet, melt butter over medium heat and add minced garlic.
  • Add shrimp and cook until pink and fragrant, about 3-5 minutes.

Roasting Potatoes

  • Preheat the oven to 400°F (200°C).
  • Toss potato wedges with olive oil, garlic, and herbs.
  • Spread on a baking sheet and roast for 20-25 minutes until crispy.

Serving

  • Serve shrimp over a bed of roasted potatoes.
  • Add a side of rice and a salad of arugula and cherry tomatoes drizzled with citrus dressing.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat before serving. Use fresh herbs for best flavor and avoid overcooking the shrimp.
