Ingredients
  

For the shrimp

  • 1 lb Shrimp Fresh or thawed frozen shrimp
  • 4 cloves Garlic Minced
  • 4 tbsp Butter For cooking shrimp
  • 1/4 cup Parsley Chopped, for garnish

For the potatoes

  • 1 lb Potatoes Baby or red potatoes, cubed
  • 2 tbsp Olive oil For roasting potatoes
  • 1 tbsp Herbs Dried or fresh, optional

For serving

  • 2 cups Rice Cooked
  • 2 cups Arugula For salad
  • 1 cup Cherry tomatoes Halved
  • 1/4 cup Citrus dressing For salad dressing

Instructions
 

Cooking the shrimp

  • In a skillet, melt butter with minced garlic over medium heat.
  • Add shrimp and cook until pink and fragrant, about 3-4 minutes.

Roasting the potatoes

  • Preheat the oven to 400°F (200°C).
  • Toss cubed potatoes with olive oil, garlic, and herbs in a baking dish.
  • Roast in the oven for about 20 minutes, or until golden and tender.

Serving

  • Serve Garlic Shrimp & Herb Potatoes hot on a plate.
  • Pair with a side of fluffy rice and a fresh salad of arugula and cherry tomatoes drizzled with citrus dressing.

Notes

Use fresh garlic for the best flavor. Don’t overcook the shrimp; they should be just pink and tender. Feel free to add your favorite herbs like thyme or rosemary for extra flavor.
