Ingredients
  

For the rice mixture

  • 1 cup rice Use any type of rice you prefer.
  • 1 cup peas Fresh or frozen.
  • 1 cup carrots Diced.
  • 1 cup bell peppers Chopped.

For the grilled shrimp

  • 1 lb grilled shrimp Seasoned with lemon, garlic, and salt.
  • 1 tbsp lemon juice Freshly squeezed.
  • 2 cloves garlic Minced.
  • to taste salt Season as needed.

For the salad

  • 2 cups lettuce Chopped.
  • 1 cup cucumber Diced.
  • 1/2 cup onion Sliced.
  • 1 cup cherry tomatoes Halved.

Instructions
 

Preparation

  • Cook the rice according to package instructions, adding peas, carrots, and bell peppers during the last few minutes of cooking.
  • Season the grilled shrimp with lemon juice, garlic, and salt.
  • In a bowl, combine the salad ingredients: lettuce, cucumber, onion, and cherry tomatoes.

Serving

  • Serve the rice mixture topped with grilled shrimp alongside the salad.

Notes

Make sure the shrimp are cooked properly and seasoned well for the best flavor. You can use any veggies you have at home; they will work just fine! For extra flavor, try adding some herbs or spices to the rice while it cooks.
