Main Ingredients

  • 2 large large zucchini Choose firm zucchinis for the best texture.
  • 1 cup marinara sauce Can be substituted with pesto for a unique twist.
  • 1 cup mozzarella cheese Add more cheese if desired.
  • 1/2 cup Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • for garnish fresh basil

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Slice the zucchini into thick rounds or halves and place them on a baking sheet.
  • Brush the zucchini with olive oil and season with salt, pepper, and Italian seasoning.
  • Bake for about 15-20 minutes, until tender.

Assembly and Baking

  • In a baking dish, spread a layer of marinara sauce, then layer half of the baked zucchini slices.
  • Top with mozzarella cheese, followed by the remaining zucchini, more marinara sauce, and then sprinkle with Parmesan cheese.
  • Bake for an additional 20-25 minutes, until the cheese is bubbly and golden.

Serving

  • Garnish with fresh basil before serving.

Notes

Serve hot with a side salad or crusty bread. Leftovers can be stored in an airtight container in the fridge for about 3 days. Reheat in the oven or microwave. For added flavor, consider adding bell peppers or mushrooms.
