Ingredients
  

For the stir-fry

  • 1 pound Beef, thinly sliced Make sure to slice the beef thinly for tenderness.
  • 1 tablespoon Fresh ginger, grated Adjust based on taste preference.
  • 3 cloves Garlic, minced Adjust based on taste preference.
  • 1 tablespoon Soy sauce Use less for low sodium.

For the mashed carrots

  • 4 medium Carrots, peeled and chopped Boil until tender.
  • 2 tablespoons Butter For creamy texture.
  • 1 tablespoon Honey Optional for added sweetness.

For serving

  • 1 cup Jasmine rice Prepare according to package instructions.
  • 2 cups Baby spinach For a fresh salad.
  • 1 cup Radish, sliced Add to the salad.
  • 2 tablespoons Sesame dressing To dress the salad.

Instructions
 

Preparation

  • Marinate the beef in ginger, garlic, and soy sauce, mixing thoroughly.

Cooking

  • Heat a hot pan and stir-fry the marinated beef until cooked to your liking.
  • In a separate pot, boil chopped carrots until tender, then drain and mash with butter and honey.
  • Prepare jasmine rice according to package instructions.
  • Toss baby spinach and sliced radish in a bowl, then drizzle with sesame dressing.

Serving

  • Serve the ginger beef alongside a scoop of mashed carrots and jasmine rice, with the fresh salad on the side.

Notes

Leftovers can be stored in airtight containers in the fridge for about 3 days. Reheat in the microwave.
