Ingredients
  

For the Beef Stir-fry

  • 1 lb Beef Tender cuts work best.
  • 1 tbsp Ginger Fresh ginger, grated.
  • 2 cloves Garlic Minced.
  • 3 tbsp Soy sauce For stir-frying.

For the Mashed Carrots

  • 4 medium Carrots Peeled and chopped.
  • 2 tbsp Butter For mashing.
  • 1 tbsp Honey Adds sweetness.

For the Rice & Salad

  • 1 cup Jasmine rice Cook according to package instructions.
  • 2 cups Baby spinach For the salad.
  • 1 cup Radish Sliced, for salad.
  • 3 tbsp Sesame dressing For dressing the salad.

Cooking

  • Stir-fry the beef with ginger, garlic, and soy sauce until cooked through.
  • Boil the carrots in water until tender, then mash them with butter and honey.
  • Cook jasmine rice according to package instructions.
  • Prepare the salad with baby spinach, radish, and drizzle with sesame dressing.
  • Serve the stir-fried beef alongside the mashed carrots and rice with the salad on the side.

Notes

For extra flavor, marinate the beef in soy sauce and ginger for 30 minutes before cooking. Try adding green onions on top for a fresh crunch. Make sure not to overcook the carrots; they should be soft but not mushy. Leftovers can be stored in an airtight container in the fridge for up to three days.
