  • 1 block firm tofu, cubed Press the tofu before cooking to remove excess moisture.
  • 1/2 unit zucchini, sliced You can add more vegetables based on what you have at home.
  • 1/2 unit bell pepper, chopped Feel free to mix different colors of bell peppers.
  • 1 clove garlic, minced
  • 1/2 teaspoon grated ginger
  • 1 tablespoon soy sauce Adjust to taste; tamari can be used for a gluten-free option.
  • to taste Sesame oil Use for flavor and cooking.

Cooking

  • Heat sesame oil in a skillet over medium heat.
  • Add the cubed tofu and sauté until golden brown.
  • Mix in the minced garlic and grated ginger, and let them cook for a minute.
  • Toss in the sliced zucchini and chopped bell pepper, stir-frying everything for about 5 minutes.
  • Finally, drizzle in the soy sauce, mixing well to ensure all the flavors blend together.

Notes

Serve hot over a bed of rice or noodles. Leftovers can be stored in an airtight container in the fridge for 2-3 days. Reheat in a pan for best results. This dish can also be made with various proteins or veggies.
