Ingredients
  

Turkey Preparation

  • 1 pound Grilled ground turkey patty Mixed with spices and grilled
  • 1 teaspoon Oregano Dried or fresh
  • 2 cloves Garlic Minced
  • 1 tablespoon Lemon juice Freshly squeezed

Quinoa Base

  • 1 cup Quinoa Cooked according to package instructions
  • 1 cup Roasted red bell peppers Chopped
  • 1 cup Zucchini Chopped

Salad Ingredients

  • 4 cups Romaine lettuce Chopped
  • 1 cup Cucumbers Diced
  • 1/2 cup Feta cheese Crumbled
  • 1/2 cup Black olives Sliced
  • 3 tablespoons Lemon dressing For drizzling

Instructions
 

Preparation

  • Mix the ground turkey with oregano, minced garlic, a pinch of salt, and lemon juice.
  • Grill the turkey until it is cooked through and has a nice char.
  • While the turkey is grilling, cook the quinoa according to the package instructions.
  • Once the quinoa is ready, mix it with roasted red bell peppers and zucchini.

Salad Assembly

  • Toss together the romaine lettuce, diced cucumbers, crumbled feta cheese, and black olives.
  • Drizzle the salad with lemon dressing.

Serving

  • Serve everything together, warm or at room temperature, with a wedge of lemon on the side.

Notes

Store leftover bowls in an airtight container in the fridge for about 3 days. Reheat the turkey and quinoa or enjoy the salad cold. Avoid overcooking the turkey to keep it juicy. Feel free to add more veggies based on what you have at home. Quinoa can be prepared in advance for a quicker meal.
