  • 1 small chicken breast, grilled and sliced
  • 1/2 cup roasted sweet potato cubes
  • 1/2 cup steamed broccoli
  • 1/2 whole avocado, sliced

Seasoning and Cooking

  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • Salt & pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss the sweet potato cubes in a bowl with olive oil, paprika, salt, and pepper. Spread them out on a baking sheet and roast for about 20 minutes until they’re tender.
  • While the sweet potatoes are roasting, grill the chicken breast until it’s fully cooked, about 5 minutes per side.
  • Steam the broccoli until it’s tender.

Assembly

  • Arrange the grilled chicken, roasted sweet potatoes, steamed broccoli, and slices of avocado in a bowl.

Notes

Ensure even cooking by cutting sweet potatoes into uniform cubes. Feel free to add other vegetables or try different proteins like shrimp or tofu. Perfect for meal prep—store components separately.
