Ingredients
  

For the rice

  • 1 cup Rice Use your choice of rice, such as white or brown.
  • 1 cup Peas Fresh or frozen can be used.
  • 1 cup Carrots Diced or shredded.
  • 1 cup Corn Fresh, canned, or frozen.

For the salad

  • 2 cups Lettuce Any variety.
  • 1 medium Avocado Diced.
  • 1 medium Onion Diced.
  • 1 medium Tomato Diced.

For the grilled chicken

  • 2 pieces Grilled chicken breast Marinate for extra flavor if desired.
  • 1 Juice Lemon For seasoning to taste.
  • to taste Salt Season according to preference.

Instructions
 

Cooking the rice

  • Cook the rice according to package instructions, adding peas, carrots, and corn during the last few minutes of cooking.

Grilling the chicken

  • Grill the chicken breast until fully cooked and no longer pink inside.

Preparing the salad

  • In a bowl, mix the salad ingredients: lettuce, avocado, onion, and tomato.

Finishing touches

  • Season the rice and grilled chicken with lemon juice and salt to taste.

Serving the dish

  • Serve the grilled chicken on top of the veggie rice, alongside the salad.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat before serving. For extra flavor, consider marinating the chicken in lemon juice and spices before grilling. You can also use quinoa instead of rice or substitute grilled chicken with grilled shrimp or tofu for a vegetarian version.
