Ingredients
  

Meats

  • 500 g lamb
  • 500 g chicken

Vegetables

  • 4 pieces potatoes, halved
  • 2 pieces sweet potatoes (kumara), chopped
  • 2 pieces carrots, chopped
  • 1 piece cabbage, quartered

Seasoning

  • 1 tbsp dried thyme
  • to taste salt
  • to taste pepper

Other

  • 2 tbsp olive oil
  • as needed ml water to keep the dish moist

Instructions
 

Preparation

  • Preheat the oven to 180°C.
  • Season the meat with salt, pepper, and thyme.
  • Arrange the meat and vegetables in a large ovenproof dish.
  • Add a little water to the bottom of the dish to keep everything moist.
  • Cover the dish tightly with aluminum foil.

Cooking

  • Bake for about 2 hours, checking on the humidity as it cooks.
  • Serve hot with Māori bread for an authentic touch.

Notes

Make sure to season the meat well for the best flavor. Check the moisture level as it bakes to keep the dish juicy. Feel free to add your favorite vegetables for a personal touch! Leftovers can be stored in the fridge for up to 3 days. Reheat before serving.
