Ingredients
  

For the Hummus and Veggies

  • 1/2 cup hummus Use store-bought or homemade.
  • 1/2 cup roasted carrots Roast until tender.
  • 1/2 cup roasted zucchini Roast until tender.
  • 1/4 cup cherry tomatoes Fresh and halved.
  • 1/2 piece pita bread, toasted Cut into triangles.
  • 1 tablespoon olive oil For drizzling.
  • 1 tablespoon lemon juice For drizzling.

Preparation

  • Preheat oven to 400°F (200°C).
  • Toss the carrots and zucchini in olive oil, season with salt and pepper, and roast in the oven for 20-25 minutes until tender.
  • Once the veggies are roasted, grab a plate and arrange them neatly with the hummus in the center.
  • Add the cherry tomatoes around the veggies.
  • Toast the pita bread and cut it into triangles, placing it on the side of the plate.
  • Drizzle olive oil and fresh lemon juice over everything.
  • Serve and enjoy this Mediterranean-inspired dish!

Notes

For extra flavor, mix spices into the hummus and try different veggies like bell peppers or cucumbers. Serve with various dips for a fun twist!
