  • 1 can Chickpeas (cooked) Use canned chickpeas for convenience.
  • 2 cups Fresh spinach You can use frozen spinach, thawed and drained.
  • 1 medium Zucchini Sliced.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Lemon juice Adjust to taste.
  • 2 tablespoons Olive oil Plus extra for serving.

Cooking

  • Heat olive oil in a pan.
  • Sauté the minced garlic until fragrant.
  • Add cooked chickpeas and sliced zucchini, cooking until tender.
  • Stir in fresh spinach and a squeeze of lemon juice.
  • Drizzle a bit more olive oil before serving warm.

Notes

Serve on its own, over rice or quinoa, or with crusty bread. Sprinkle with extra lemon juice for freshness. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat before serving. Feel free to add other veggies like bell peppers or carrots for extra nutrition. Consider adding cooked quinoa to make it a complete meal, or sprinkle feta cheese on top for creaminess.
