Lemon Garlic Tofu & Brown Rice

Ingredients
  

For the Tofu Marinade

  • 1 block Grilled tofu cubes Firm tofu, drained and pressed
  • 1 whole Lemon Juiced
  • 3 cloves Garlic Minced

For the Rice and Vegetables

  • 1 cup Brown rice Cook according to package instructions
  • 1 cup Mushrooms Sliced
  • 1 medium Zucchini Sliced
  • 1 cup Peas Fresh or frozen
  • 2 cups Arugula Fresh
  • 1 whole Avocado Sliced
  • 1 cup Cherry tomatoes Halved
  • 1 medium Red onion Sliced

For Drizzling

  • 2 tablespoons Olive oil To taste
  • 1 tablespoon Balsamic vinegar To taste

Preparation

  • Marinate the tofu cubes in lemon juice and minced garlic for at least 30 minutes.
  • Cook the brown rice according to package instructions.

Grilling and Cooking Vegetables

  • Grill the marinated tofu until golden brown.
  • Sauté mushrooms, zucchini, and peas in olive oil until tender.

Assembly and Serving

  • In a bowl, assemble the arugula, sliced avocado, halved cherry tomatoes, and sliced red onion.
  • Serve the grilled tofu on top of the brown rice with the sautéed vegetables on the side.
  • Drizzle with olive oil and balsamic vinegar to taste.

Notes

Make sure to marinate the tofu for enough time to soak up that lemony garlic flavor. You can add other veggies you like, such as bell peppers or spinach, to make it even more colorful and tasty! If you want to save time, use pre-cooked brown rice or a rice cooker. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
