Ingredients
  

For the Shrimp

  • 1 pound Grilled shrimp Use fresh or thawed frozen shrimp.
  • 1 Juice of Lemon For marinating the shrimp.
  • 1/4 cup Chopped parsley Fresh parsley enhances flavor.
  • 2 cloves Garlic Minced.

For the Bowl

  • 1 cup Couscous Follow package instructions for cooking.
  • 1 cup Roasted zucchini Roast zucchini before mixing with couscous.
  • 1 cup Cherry tomatoes Halved.
  • 2 cups Arugula Fresh.
  • 4 ounces Goat cheese Crumbled.
  • 1/2 cup Walnuts Chopped.
  • 1/4 cup Lemon vinaigrette For dressing.

Instructions
 

Preparation

  • Start by marinating the shrimp with lemon juice, chopped parsley, and minced garlic for about 30 minutes.

Cooking

  • Grill the shrimp for 3-4 minutes on each side until they are cooked through.
  • Cook the couscous as per the package instructions. After it’s ready, mix in the roasted zucchini and cherry tomatoes.

Assembly

  • In a bowl, toss together the arugula, crumbled goat cheese, and walnuts. Drizzle this with lemon vinaigrette for added flavor.
  • Serve everything together in a bowl and enjoy!

Notes
