  • 1 medium Lemon For juicing.
  • 1/4 cup Herbs Fresh herbs like parsley or thyme.
  • 2 cups Chickpeas Can use canned or cooked chickpeas.
  • 2 tbsp Olive oil
  • 2 cloves Garlic Minced.
  • 1 cup Wild rice Cook as per package instructions.
  • 4 cups Mixed greens For the salad.
  • 1/2 cup Cranberries Dried cranberries.
  • 1/2 cup Goat cheese Crumbled.
  • 1/4 cup Salad dressing Your choice.

Preparation

  • Season the turkey breast with fresh lemon juice and herbs.
  • Grill the turkey until juicy and well-cooked, about 15-20 minutes.
  • For the mashed chickpeas, mix chickpeas with olive oil and minced garlic, then mash until smooth.
  • Cook the wild rice according to package instructions until fluffy.
  • In a bowl, toss together mixed greens, cranberries, and goat cheese. Add your favorite salad dressing and mix well.

Serving

  • Serve the grilled turkey on a plate with the mashed chickpeas, a side of wild rice, and a refreshing salad.

Notes

For the best flavor, use fresh herbs. You can add a squeeze of lemon juice to the mashed chickpeas for extra zing. Adjust the ingredients based on your family's preferences; add more veggies if desired. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave when ready to eat.
