Ingredients

  • 1 cup Lentils Rinse before cooking to remove dust or debris.
  • 1 medium Onion
  • 2 medium Carrots Diced.

Protein and Carbs

  • 2 pieces Chicken breast Grill until fully cooked.
  • 1 cup Rice Cook according to package instructions.

Salad Ingredients

  • 1 medium Avocado
  • 1 cup Lettuce Chopped.
  • 1 medium Tomato Diced.

Dressing

  • 2 tablespoons Lemon dressing

Cooking Lentils

  • Cook the lentils in a pot with diced onion and carrots until tender.
  • Season the lentil stew with salt and pepper.

Grilling Chicken

  • Grill the chicken breast until fully cooked and juices run clear.

Cooking Rice

  • Cook the rice according to package instructions.

Preparing Salad

  • Prepare the salad by mixing avocado, lettuce, and tomato with lemon dressing.

Serving

  • Serve the lentil stew hot, with the grilled chicken on the side and fluffy rice on the plate along with a fresh salad.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Freeze the stew for longer storage, thaw before reheating. Adjust spices to taste; consider adding garlic or herbs. Extra grilled chicken can be used in salads or sandwiches later in the week.
