Ingredients
  

For the Chicken

  • 4 pieces Grilled chicken breast Make sure chicken is cooked all the way through.
  • 1 tablespoon Oregano
  • 2 cloves Garlic Minced

For the Couscous

  • 1 cup Couscous Prepare according to package instructions.

For the Salad

  • 1 cup Chopped cucumber
  • 1 cup Cherry tomatoes Halved
  • 1/4 cup Parsley Chopped
  • 2 cups Romaine lettuce Chopped
  • 1/2 cup Olives Sliced
  • 1/4 cup Red onion Thinly sliced
  • 1/2 cup Feta cheese Crumble

For the Dressing

  • 1 lemon Lemon Juiced
  • 3 tablespoons Olive oil

Instructions
 

Preparation

  • Season the chicken breast with oregano and garlic. Grill until cooked through and juices run clear.
  • Prepare couscous according to package instructions.
  • In a bowl, combine cooked couscous with chopped cucumber, cherry tomatoes, and parsley.
  • For the salad, mix romaine, olives, red onion, and feta cheese in a separate bowl.
  • For dressing, whisk together lemon juice and olive oil.

Assembly

  • Serve grilled chicken over couscous and accompany with the salad.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat before serving. Feel free to add your favorite veggies to the salad for extra crunch!
