  • 1/2 cup cooked, shredded chicken Use leftover chicken for convenience.
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp lime juice
  • 1/2 cup cooked brown rice Can be substituted with white rice or quinoa.
  • 1/4 cup black beans
  • 1/4 cup corn kernels
  • 1/4 cup diced bell peppers
  • 1/4 medium avocado, sliced
  • 1 tbsp salsa Use hot salsa for added spiciness if desired.

Preparation

  • Mix the shredded chicken with chili powder, cumin, and lime juice in a bowl.

Assembly

  • Start with a layer of brown rice at the bottom of your bowl.
  • Next, add black beans, corn, diced bell peppers, and top with avocado slices.
  • Finish the bowl with a spoonful of salsa.

Serving

  • Serve warm and add extra toppings like cheese, sour cream, or fresh cilantro if desired.

Notes

If you have leftovers, store in an airtight container in the fridge for up to 2 days. Reheat in the microwave until hot. Try adding grilled shrimp or beef for a different taste, or make it vegetarian by omitting meat and adding extra beans and vegetables.
