  • 1 piece grilled chicken breast Make sure the chicken is fully cooked before serving.
  • 1 cup roasted sweet potato cubes Roast until tender.
  • 1 cup steamed broccoli Steam until bright green and just tender.
  • 1 piece sliced avocado
  • a handful almonds Toast for extra flavor and crunch if desired.

Preparation

  • Grill the chicken breast until cooked through.
  • Roast sweet potato cubes in the oven until tender.
  • Steam the broccoli until bright green and just tender.
  • Slice the avocado.

Serving

  • Combine all ingredients on a plate and top with almonds.
  • Serve your Protein and Fiber Boost in a nice bowl. Enjoy it warm or at room temperature.

Notes

This recipe is great for meal prep. Store any leftovers in an airtight container in the fridge for 2-3 days. Reheat the chicken and veggies gently when ready to eat. You can swap the chicken for tofu or beans to make it vegetarian. Feel free to add more veggies like bell peppers or spinach.
