  • 1/2 cup chickpeas Canned or cooked chickpeas
  • 1/2 whole avocado, diced Fresh and ripe for best flavor
  • 1/4 cup diced cucumber Any variety can be used
  • 1/4 cup cherry tomatoes Halved for easy mixing

Dressing

  • 2 tablespoons olive oil Adjust to taste
  • 1 tablespoon lemon juice Freshly squeezed
  • to taste salt
  • to taste pepper

Preparation

  • Toss all the ingredients together in a bowl.

Notes

Store leftovers in an airtight container in the fridge and consume within a day or two. Adjust lemon juice and olive oil to your preference. Adding feta cheese or leafy greens can enhance flavors.
