Main Ingredients

  • 1/2 cup rice noodles, cooked Cook according to package directions.
  • 6–8 large shrimp, peeled and cooked Ensure shrimp are cooked until pink and opaque.
  • 1/4 cup shredded cabbage
  • 1/4 cup julienned carrots
  • 1/4 cup sliced cucumber
  • 1 tablespoon peanuts, crushed For garnish.
  • 1 tablespoon soy sauce or sesame dressing Use to taste.

Preparation

  • Bring a pot of water to a boil, then add the rice noodles and cook according to package directions. Once done, drain and rinse under cold water to prevent sticking.
  • In a heated pan with a touch of oil, cook the shrimp for about 2–3 minutes per side, or until they turn pink and opaque. Set aside.

Assembly

  • Place the rice noodles at the base of a bowl, then layer on the cooked shrimp, shredded cabbage, julienned carrots, and fresh cucumber slices.
  • Drizzle with soy sauce or sesame dressing, then sprinkle crushed peanuts on top for a delightful crunch.

Serving

  • Mix everything together and savor this light, flavorful, and refreshing dish.

Notes

Ensure to rinse the noodles well to prevent sticking. Feel free to add your favorite veggies like bell peppers or snap peas. For extra heat, add chili flakes or Sriracha. You can also swap shrimp for chicken or tofu.
