  • 1/2 cup mushrooms, sliced Use fresh for the best flavor.
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 squeeze lemon juice Adjust to taste.

Cooking

  • Heat olive oil in a pan over medium heat.
  • Add minced garlic and sliced mushrooms to the pan. Sauté until they are golden brown.
  • Toss in the chopped kale and cook for about 2 minutes, or until the kale is wilted.
  • Finish by squeezing some lemon juice over the mixture and enjoy your nutrient-packed side dish!

Notes

To store, place leftovers in an airtight container in the fridge for 2-3 days. Reheat over low heat. Variations include adding other vegetables like bell peppers or mixing different types of mushrooms.
