Main Ingredients

  • 2 cups mango chunks Use ripe mangoes for the best flavor.
  • 1 pound cooked shrimp Frozen shrimp works well; thaw before cooking if using frozen.
  • 1 cup cherry tomatoes Slice in halves.
  • 1 ear corn on the cob, sliced Boil or grill until tender.
  • 1/4 cup chopped parsley Garnish for added flavor.

Preparation

  • Boil or grill the corn until it’s tender.
  • If your shrimp is not precooked, cook it with olive oil, salt, and pepper.
  • Slice the cherry tomatoes in halves.

Assembly

  • In a bowl, assemble the mango chunks, shrimp, halved cherry tomatoes, and corn.
  • Garnish with chopped parsley and enjoy!

Notes

The bowl is best served fresh and slightly chilled. You can enjoy it on its own or pair it with a light side salad or some crusty bread. If you have leftovers, store in an airtight container in the fridge for up to two days.
