  • 1 cup Cooked quinoa Rinse quinoa before cooking to remove its natural coating.
  • 1 lb Grilled shrimp Feel free to grill with some spices for added flavor.
  • 1 cup Cucumber, diced Adds a refreshing crunch.
  • 1 cup Mango, diced For a sweet and tropical twist.
  • 1/4 cup Red onion, finely chopped Adds sharp flavor.
  • 1/4 cup Fresh cilantro, chopped Enhances the freshness of the bowl.
  • 3 tablespoons Lime & olive oil dressing Drizzle on top before serving.

Preparation

  • In a large bowl, add the cooked quinoa.
  • Toss in the grilled shrimp, diced cucumber, mango, red onion, and cilantro.
  • Drizzle with lime & olive oil dressing.
  • Mix everything together gently.
  • Serve fresh and enjoy!

Notes

Store leftovers in an airtight container in the fridge and consume within 2-3 days. Store the dressing separately until ready to serve. This dish can be served warm or cold.
