Ingredients

  • 3 oz smoked salmon
  • 1 cup fresh spinach Use fresh for best flavor
  • 1/2 cup cherry tomatoes, halved
  • 1 piece boiled egg, sliced Hard-boil the egg before slicing

Dressing

  • 1 tbsp lemon juice Adjust according to taste
  • 1 tsp olive oil Adjust according to taste
  • Salt & pepper to taste

Instructions
 

Preparation

  • Boil the egg until it's hard-boiled. Once it cools, peel it and slice it into pieces.
  • In a bowl, toss the fresh spinach with olive oil and lemon juice.
  • Arrange the spinach on a plate along with the smoked salmon, halved cherry tomatoes, and sliced egg.
  • Sprinkle with salt and pepper to taste.

Notes

Store leftovers in an airtight container in the fridge, keeping salmon separate for freshness. Enjoy within a day for the best taste.
