Ingredients
  

For the spiced salmon

  • 4 fillets salmon fillets Make sure to season well with spices.
  • 1 tsp paprika Adds a smokey flavor.
  • 1 tsp cumin For an earthy tone.
  • 1 pinch salt To taste.

For the mashed cauliflower

  • 1 head cauliflower Steamed until soft.
  • 1/4 cup Parmesan cheese Grated, adds creaminess to the mash.

For serving

  • 1 cup quinoa Cooked according to package instructions.
  • 2 cups baby spinach Fresh for a side salad.
  • 1/2 cup walnuts Chopped for added crunch.
  • 2 tbsp balsamic dressing For the spinach salad.

Instructions
 

Preparation of Salmon

  • Rub the salmon fillets with paprika, cumin, and a pinch of salt, ensuring the spices cover the salmon well for flavor.
  • Grill the salmon until it’s cooked through and flakes easily with a fork.

Mashed Cauliflower

  • While the salmon is grilling, steam the cauliflower until soft.
  • Mash the cauliflower and add grated Parmesan cheese for creaminess.

Cook Quinoa

  • Cook the quinoa according to the package instructions, and fluff it with a fork when it’s ready.

Prepare Salad

  • For a fresh side, toss baby spinach and walnuts together, then dress them with balsamic dressing.

Serve

  • Serve the grilled salmon alongside the creamy mashed cauliflower and fluffy quinoa. Include the spinach salad for added crunch.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat gently in the microwave or on stove. Consider adding more veggies to the mashed cauliflower for extra nutrients.
