Ingredients
  

For the Turkey

  • 1 lb Ground turkey patty Grilled until cooked through
  • 1 tsp Paprika Adjust to taste for spice
  • 1 tsp Cumin

For the Bowl

  • 1 cup Wild rice Cook according to package instructions
  • 2 cups Roasted sweet potatoes Roasted until tender
  • 2 cups Green beans Roasted until tender
  • 2 cups Kale Used for salad base
  • 1/2 cup Cranberries Dried cranberries
  • 1/2 cup Walnuts Chopped
  • 1/2 cup Goat cheese Crumbled on top

Instructions
 

Preparation

  • Season the ground turkey with paprika and cumin, then grill until cooked through.
  • Cook the wild rice according to package instructions.
  • Roast sweet potatoes and green beans until tender.
  • In a bowl, combine kale, cranberries, walnuts, and goat cheese to make the salad.

Assembly

  • Assemble the bowl with wild rice, grilled turkey patty, roasted vegetables, and salad.

Notes

Serve warm. Optionally, add extra herbs or a squeeze of lemon for added flavor. Can be stored in an airtight container in the fridge for up to three days. Great for meal prep. Customize with different veggies as desired.
